    Peel and cut the potato into 2cm cubes, then parboil in salted water for 6 minutes and drain well so they dry out.
  2. 2
    Heat the oil in a wide pan and fry the potato over a medium-high heat for 12-15 minutes, turning now and then, until golden and crisp all over.

    Add the finely chopped garlic and chilli with the paprika and cumin and fry for 1-2 minutes until fragrant.

    Season with the salt and a good squeeze of lemon juice, tossing to coat the potatoes.

    Stir through the chopped coriander off the heat and serve straight away.
