1Slice the halloumi into 1cm slabs and pat dry on kitchen paper.

2Fry in the olive oil over a medium-high heat for 2 minutes each side until golden and crisp.

3Warm the pita breads, split them open and spread the inside with hummus.

4Fill with shredded lettuce, sliced cucumber and tomato, then the hot halloumi.

5Fold or roll up and serve straight away.
