The recipe

Instructions

    Slice the halloumi into 1cm slabs and pat dry on kitchen paper.
  2. 2
    Fry in the olive oil over a medium-high heat for 2 minutes each side until golden and crisp.
  3. 3
    Warm the pita breads, split them open and spread the inside with hummus.
  4. 4
    Fill with shredded lettuce, sliced cucumber and tomato, then the hot halloumi.
  5. 5
    Fold or roll up and serve straight away.
