The recipe

    Mix the beef with the grated onion, half the crushed garlic, the cumin, cinnamon, half the chopped parsley and the salt, then roll into small kofta balls.

    Brown the kofta in the oil over a medium-high heat for 6-8 minutes, turning to colour all over, then lift out.
  3. 3
    Add the remaining garlic and the paprika to the pan for 30 seconds, then pour in the chopped tomatoes with a splash of water.

    Return the kofta to the sauce and simmer for 15 minutes until cooked through with no pink in the middle.
  5. 5
    Meanwhile cook the rice until tender, then serve the kofta and sauce over the rice scattered with the rest of the parsley.
