1Cook the noodles in boiling water until tender, then drain, reserving a mugful of the cooking water.

2Whisk the peanut butter, soy sauce and sweet chilli sauce with the crushed garlic, a squeeze of lime and a few spoons of the reserved water into a loose sauce.

3Cut the carrot and red pepper into thin matchsticks.

4Toss the hot noodles with the sauce and the raw carrot and pepper until everything is glossy and coated, loosening with more water if needed.

5Scatter with sliced spring onions and chopped peanuts and serve with the last of the lime.
