    Cook the noodles in boiling water until tender, then drain, reserving a mugful of the cooking water.

    Whisk the peanut butter, soy sauce and sweet chilli sauce with the crushed garlic, a squeeze of lime and a few spoons of the reserved water into a loose sauce.

    Cut the carrot and red pepper into thin matchsticks.
  4. 4
    Toss the hot noodles with the sauce and the raw carrot and pepper until everything is glossy and coated, loosening with more water if needed.
  5. 5
    Scatter with sliced spring onions and chopped peanuts and serve with the last of the lime.
