    Bring the steak to room temperature. Pat dry, season with salt and pepper. Sear in a screaming-hot pan for 3 minutes per side. Rest.

    Mix dressing: lime juice, fish sauce, palm sugar, crushed garlic, chopped chillies.

    Slice cucumber, halve tomatoes, thinly slice red onion.

    Slice the rested steak thinly against the grain. Toss with the salad and dressing.

    Pile on a platter. Scatter with mint and coriander. Eat immediately.
