1Bring the steak to room temperature. Pat dry, season with salt and pepper. Sear in a screaming-hot pan for 3 minutes per side. Rest.

2Mix dressing: lime juice, fish sauce, palm sugar, crushed garlic, chopped chillies.

3Slice cucumber, halve tomatoes, thinly slice red onion.

4Slice the rested steak thinly against the grain. Toss with the salad and dressing.

5Pile on a platter. Scatter with mint and coriander. Eat immediately.
