1Peel and shred the papaya thinly with a julienne peeler or mandoline. Slice the green beans.

2In a mortar, pound garlic and chillies to a rough paste. Add palm sugar and crush in.

3Add halved tomatoes and beans, bruise lightly. Squeeze in lime juice and fish sauce.

4Add the papaya, dried shrimp and most of the peanuts. Toss thoroughly so the dressing coats everything.

5Pile on a plate, top with remaining peanuts and a final squeeze of lime. Eat with sticky rice.
