Thailand's most-eaten salad — shredded green papaya pounded with chilli, lime, fish sauce and tomato. Bright, fiery, eat-it-with-rice. Use unripe mango if papaya is hard to find.

    Peel and shred the papaya thinly with a julienne peeler or mandoline. Slice the green beans.

    In a mortar, pound garlic and chillies to a rough paste. Add palm sugar and crush in.
  3. 3
    Add halved tomatoes and beans, bruise lightly. Squeeze in lime juice and fish sauce.
  4. 4
    Add the papaya, dried shrimp and most of the peanuts. Toss thoroughly so the dressing coats everything.

    Pile on a plate, top with remaining peanuts and a final squeeze of lime. Eat with sticky rice.
