The recipe

    Hard-boil the eggs for 8 minutes, cool and peel. Cut the pork belly into 4cm cubes.

    In a heavy pan, melt the sugar over medium heat without stirring until it turns deep amber — about 4 minutes.

    Carefully add the pork (it will spit), turn to coat in caramel. Add chopped onion, garlic and chilli. Cook 3 minutes.

    Pour in fish sauce, soy and coconut water. Add the peeled eggs. Cover and simmer on low for 60 minutes, stirring occasionally.

    Remove the lid for the final 10 minutes to reduce the sauce to a glossy coating. Top with spring onion. Serve over rice.
