The recipe

Instructions

    Fry the chopped onion, garlic and diced red pepper in a little oil for 5 minutes, then stir in the paprika.

    Add the chopped tomatoes, drained beans and crumbled stock cube with a splash of water and simmer for 20 minutes until thick.
  3. 3
    Meanwhile peel and slice the plantain, then fry in the rest of the oil over a medium heat for 2-3 minutes each side until golden and soft.

    Drain the plantain on kitchen paper and serve alongside the spiced beans.
