The recipe

    Soak the dried fava beans overnight in cold water. Drain.
  2. 2
    Cook in 1L fresh water with garlic and salt for 30-40 minutes until completely soft.
  3. 3
    Blend until completely smooth. Adjust thickness with hot water.
  4. 4
    Stir in cumin, paprika and most of the olive oil.
  5. 5
    Ladle into bowls. Top with remaining olive oil, more cumin, chilli flakes. Eat with bread and lemon.
