1Soak the dried fava beans overnight in cold water. Drain.

2Cook in 1L fresh water with garlic and salt for 30-40 minutes until completely soft.

3Blend until completely smooth. Adjust thickness with hot water.

4Stir in cumin, paprika and most of the olive oil.

5Ladle into bowls. Top with remaining olive oil, more cumin, chilli flakes. Eat with bread and lemon.
