    Cube the beef. Brown in oil in a heavy pot, set aside.

    Soften chopped onion 8 minutes. Add garlic, ginger and spices for 1 minute.

    Return beef with stock and tomatoes. Simmer covered 90 minutes until tender.

    Add cubed sweet potato and chopped peppers. Simmer 30 more minutes uncovered.
  5. 5
    Top with coriander. Serve with rice or couscous.
