1Cube the beef. Brown in oil in a heavy pot, set aside.

2Soften chopped onion 8 minutes. Add garlic, ginger and spices for 1 minute.

3Return beef with stock and tomatoes. Simmer covered 90 minutes until tender.

4Add cubed sweet potato and chopped peppers. Simmer 30 more minutes uncovered.

5Top with coriander. Serve with rice or couscous.
