    Spatchcock the chicken: cut down each side of the backbone with kitchen scissors. Press flat.

    Blend chillies, garlic, lemon juice, paprika, vinegar, oil, oregano and salt to a thick paste.

    Massage half the marinade over the chicken — get under the skin. Marinate 4-24 hours.

    Heat oven to 200°C. Roast skin-side up on a tray for 35 minutes, basting twice.
  5. 5
    Rest 5 minutes. Cut into pieces. Drizzle with remaining marinade. Eat with chips and lemon.
