The recipe

Instructions

    Fry the chopped onion and garlic in the oil for 4 minutes, then add the diced red pepper and grated carrot and cook for 5 minutes.

    Stir in the curry powder and chilli powder and cook for 1 minute until fragrant.

    Add the chopped tomatoes and drained beans with a splash of water and bring to a simmer.

    Cook for 15 minutes until thick and the vegetables are tender, then season and serve warm or cold.
