1Squeeze the sausagemeat out of the skins and fry in the oil over a medium heat for 8-10 minutes, breaking it up, until browned and cooked through with no pink remaining.

2Add the finely chopped red onion and tomato and cook for another 2 minutes.

3Beat the eggs with the salt, pour into the pan and stir gently for 2-3 minutes until just set.

4Warm the tortillas in a dry pan for a few seconds each.

5Spoon the filling down the middle of each tortilla, scatter over the grated cheese, then fold in the sides and roll up tightly.

6Serve straight away, or wrap in foil to take out.
