    Squeeze the sausagemeat out of the skins and fry in the oil over a medium heat for 8-10 minutes, breaking it up, until browned and cooked through with no pink remaining.

    Add the finely chopped red onion and tomato and cook for another 2 minutes.

    Beat the eggs with the salt, pour into the pan and stir gently for 2-3 minutes until just set.

    Warm the tortillas in a dry pan for a few seconds each.
  5. 5
    Spoon the filling down the middle of each tortilla, scatter over the grated cheese, then fold in the sides and roll up tightly.

    Serve straight away, or wrap in foil to take out.
