A proper family meatloaf, costed to the penny. Cheap mince bulked out with breadcrumbs and onion, glazed with ketchup, so it feeds four for pennies a slice.

    Heat the oven to 190C. Finely chop the onion and soften in a little oil for 5 minutes, then leave to cool slightly.

    Mix the mince, onion, garlic, breadcrumbs, beaten egg, herbs, worcestershire sauce, crumbled stock cube and salt in a bowl until well combined.

    Press the mixture into a loaf tin and smooth the top. Spread the ketchup over the surface.

    Bake for 50-55 minutes until firm, well browned and cooked right through with no pink meat and the juices running clear.

    Rest for 5 minutes, then slice and serve with mash or veg.
