Instructions

    Peel and coarsely grate the potatoes and onion, then tip into a clean tea towel and wring out as much liquid as possible.

    Mix the squeezed potato and onion in a bowl with the egg, flour, salt and pepper.
  3. 3
    Heat the oil in a frying pan over a medium-high heat.
  4. 4
    Spoon in the mixture and press into flat patties, frying for 5-6 minutes each side until deep golden and crisp and the potato is cooked through.

    Drain on kitchen paper and serve hot.
