The recipe

    Whisk the maize meal, flour, baking powder, sugar and salt together, then beat in the egg and milk to a thick, smooth batter.

    Pat 8 sausages dry and push a skewer lengthways into each one so it is easy to handle.
  3. 3
    Heat the oil in a deep pan to 180C. Dip each sausage into the batter, turning to coat all over.

    Fry two or three at a time for 4-5 minutes, turning, until deep golden and the sausages are piping hot through.

    Drain on kitchen paper and serve with ketchup and mustard.
