    Heat the oven to 180C and line two baking trays. Beat the softened butter with the peanut butter, caster sugar and brown sugar until creamy.

    Beat in the egg, then work in the flour to make a soft dough.
  3. 3
    Roll the dough into 12 balls, space them well apart on the trays and flatten each with a fork to make the classic criss-cross pattern.

    Bake for 10-12 minutes until golden at the edges but still soft in the middle. Leave on the tray for 5 minutes to firm up, then cool on a rack.
