1Drain the tuna well and mix in a bowl with the mayonnaise, mustard, finely sliced spring onion and a good grind of pepper.

2Butter the bread on the outside of each slice.

3Build two sandwiches butter-side out, filling with the tuna mix and grated cheese.

4Cook in a dry frying pan over a medium heat for 3-4 minutes each side, pressing down, until golden and the cheese has melted.

5Cut in half and serve straight away while hot.
