A hot, gooey tuna melt done on a budget. A tin of tuna and a handful of cheese turns two slices of bread into a proper lunch.

    Drain the tuna well and mix in a bowl with the mayonnaise, mustard, finely sliced spring onion and a good grind of pepper.

    Butter the bread on the outside of each slice.
  3. 3
    Build two sandwiches butter-side out, filling with the tuna mix and grated cheese.
  4. 4
    Cook in a dry frying pan over a medium heat for 3-4 minutes each side, pressing down, until golden and the cheese has melted.
  5. 5
    Cut in half and serve straight away while hot.
