1Cut the tomatoes into rough wedges, the cucumber into half-moons, the red onion into thin rings.

2Slice the green pepper. Combine all the vegetables in a wide shallow bowl.

3Add the olives. Drizzle with olive oil, vinegar, salt and oregano. Toss gently with your hands.

4Lay a slab of feta on top — don't crumble it. Sprinkle with more oregano.

5Eat immediately with crusty bread to mop up the juices. Tomato juice + olive oil + bread = the best part.
