No lettuce — just chunks of tomato, cucumber, red onion, peppers, olives and a slab of feta dressed with oregano and olive oil. The simplicity is the whole point.

    Cut the tomatoes into rough wedges, the cucumber into half-moons, the red onion into thin rings.

    Slice the green pepper. Combine all the vegetables in a wide shallow bowl.
  3. 3
    Add the olives. Drizzle with olive oil, vinegar, salt and oregano. Toss gently with your hands.

    Lay a slab of feta on top — don't crumble it. Sprinkle with more oregano.
  5. 5
    Eat immediately with crusty bread to mop up the juices. Tomato juice + olive oil + bread = the best part.
