The recipe

    Cube the pork into 3cm pieces. Mix with crushed garlic, lemon juice, olive oil, oregano, salt and pepper.

    Marinate at least 1 hour, or up to 24 in the fridge.

    Thread onto skewers (soak wooden ones first). Cook on a screaming-hot griddle pan or BBQ for 10-12 minutes, turning, until charred and just cooked through.

    For tzatziki: grate the cucumber, squeeze out water, mix with yogurt, the remaining crushed garlic, salt and a splash of lemon.
  5. 5
    Warm the pitas. Assemble with souvlaki, tzatziki, sliced tomatoes and onion. Wrap and eat.
