    Grate the cucumber into a sieve, salt it, and leave 10 minutes to draw out water.

    Squeeze the cucumber hard with your hands to remove as much liquid as possible.

    Mix with the yogurt, crushed garlic, chopped dill, lemon juice and a pinch of salt.

    Drizzle with olive oil and stir through.
  5. 5
    Cover and chill at least 30 minutes — it's better after an hour for the flavours to meld.
