1Grate the cucumber into a sieve, salt it, and leave 10 minutes to draw out water.

2Squeeze the cucumber hard with your hands to remove as much liquid as possible.

3Mix with the yogurt, crushed garlic, chopped dill, lemon juice and a pinch of salt.

4Drizzle with olive oil and stir through.

5Cover and chill at least 30 minutes — it's better after an hour for the flavours to meld.
