The recipe

    Wilt the spinach in a dry pan, then squeeze out as much water as you can. Chop roughly.
  2. 2
    Mix with crumbled feta, chopped dill and spring onion, beaten eggs, pepper and nutmeg.
  3. 3
    Melt the butter. Layer 6 sheets of filo in a baking tin, brushing each with butter.
  4. 4
    Spread the filling evenly. Top with another 6 sheets of buttered filo. Score the top into squares.

    Bake at 180°C for 35-40 minutes until deep golden and crisp. Cool slightly before cutting.
