    Peel and boil the potatoes until soft, drain well and mash with the butter, salt and pepper, then leave to cool a little.

    Work in the flour to make a soft dough, adding a touch more flour if it feels sticky.
  3. 3
    Roll out on a floured surface to about 1cm thick and cut into rounds or triangles.
  4. 4
    Fry in the oil over a medium heat for 3-4 minutes each side until golden and heated through, then serve hot.
