The recipe

Instructions

    Cut the sausages in half, the bacon into strips. Slice the onions and potatoes thickly.
  2. 2
    Layer in a heavy pot: onions, sausages and bacon, potatoes. Repeat for two layers.
  3. 3
    Add thyme, bay, pepper. Pour over enough stock to nearly cover.
  4. 4
    Bring to a simmer, cover, cook on lowest heat for 75 minutes until potatoes are tender.
  5. 5
    Top with chopped parsley. Eat with soda bread to mop the broth.
