    Peel and cube the potatoes. Boil in salted water 18 minutes until tender.

    Slice the spring onions, including most of the green tops. Warm the milk in a small pan.
  3. 3
    Drain the potatoes well, then mash thoroughly. Add butter and warm milk gradually until silky.
  4. 4
    Stir in the spring onions. Season generously.
  5. 5
    Pile in a mound with a deep well in the centre. Drop another knob of butter in to melt. Eat hot.
