1Peel and roughly chop all the vegetables into small chunks so they cook quickly.

2Soften the onion and leek in a large pot with a splash of water for 5 minutes, then add the rest of the vegetables.

3Pour in enough water to cover, crumble in the stock cubes and simmer for 25-30 minutes until everything is soft.

4Blitz until smooth, season with salt and pepper and loosen with a little more water if needed before serving.
