    Make a quick bechamel: melt butter, whisk in flour for 1 minute, then milk gradually. Cook until thick. Season with mustard and nutmeg.

    Lightly toast the bread. Spread the bechamel on each slice.
  3. 3
    Layer ham and half the grated gruyere onto two slices. Top with the other slices, bechamel side up.

    Pile the remaining cheese on top. Place under a hot grill until bubbling and deep golden.
  5. 5
    Serve immediately, with cornichons and a sharp salad on the side. Add a fried egg on top to make it a Madame.
