1Make a quick bechamel: melt butter, whisk in flour for 1 minute, then milk gradually. Cook until thick. Season with mustard and nutmeg.

2Lightly toast the bread. Spread the bechamel on each slice.

3Layer ham and half the grated gruyere onto two slices. Top with the other slices, bechamel side up.

4Pile the remaining cheese on top. Place under a hot grill until bubbling and deep golden.

5Serve immediately, with cornichons and a sharp salad on the side. Add a fried egg on top to make it a Madame.
