The recipe

    Rub butter into flour until breadcrumb texture. Mix in egg and water to form a dough. Rest 20 minutes.

    Roll out and line a 25cm tart tin. Blind bake at 180°C for 15 minutes with baking beans.

    Cook the diced bacon and onion in a pan for 8 minutes until golden. Spread over the pastry base.

    Whisk eggs, cream, salt, pepper and nutmeg. Pour into the case. Sprinkle with grated gruyere.

    Bake for 25-30 minutes until just set with a slight wobble in the centre. Cool 10 minutes before slicing.
