    Heat the oven to 200°C / Gas 6. Peel the potatoes and cut into thick wedges, about six per potato.

    Tip them into a roasting tray with the olive oil, juice of both lemons, crushed garlic, oregano and salt. Toss until well coated.
  3. 3
    Pour over the stock — it should come up roughly halfway. Roast uncovered for 35 minutes.

    Turn the potatoes carefully, return to the oven for another 15 minutes until the liquid has reduced to a glossy coating and the edges are golden.

    Serve hot with a final scatter of oregano and a squeeze of fresh lemon.
