    Cube the potatoes and break the cauliflower into small florets.

    Heat oil in a wide pan, add cumin seeds, then chopped onion. Cook 6 minutes until golden.
  3. 3
    Add garlic, ginger, chilli and ground spices for 1 minute. Then potatoes — coat well in spices.
  4. 4
    Add cauliflower with a splash of water and salt. Cover and cook 20 minutes, stirring occasionally, until both are tender.
  5. 5
    Uncover, increase heat for 3 minutes to dry out the curry. Top with coriander.
