    Cube the potatoes. Boil in salted water for 10 minutes until just tender. Drain and dry well.

    Heat the oil in a wide pan, add cumin and mustard seeds — let them pop.
  3. 3
    Add chopped onion and cook 6 minutes. Stir in garlic, ginger, chilli, turmeric and garam masala for 1 minute.

    Tip in the potatoes and toss. Cook on medium-high for 12 minutes, stirring occasionally, until crisp and golden.
  5. 5
    Squeeze over lemon, scatter with coriander. Serve with anything.
