Britain's adopted national dish — yogurt-marinated chicken in a creamy, smoky tomato curry. Cheaper than the takeaway and easily as good if you brown the chicken hard.

    Cube the chicken. Marinate with yogurt, half the garlic, half the ginger, half the spices and salt for at least 20 minutes.

    Sear the marinated chicken in batches in a hot pan until charred at the edges, 4 minutes per batch. Set aside.
  3. 3
    In the same pan, soften chopped onion 8 minutes. Add remaining garlic, ginger, spices for 1 minute.

    Stir in the tomatoes and cook 10 minutes until thickened. Blend smooth if you want.

    Return the chicken with cream. Simmer 8 minutes. Top with coriander, serve with rice or naan.
