1Cube the lamb. Mix with yogurt, salt, half the garlic and ginger. Marinate 30 minutes.

2Heat oil in a heavy pot. Add cardamom and cinnamon, cook 30 seconds. Add chopped onions, brown deeply 12 minutes.

3Stir in remaining garlic, ginger, ground spices for 1 minute. Add lamb with marinade, brown 5 minutes.

4Pour in tomatoes plus a tin of water. Bring to a simmer, cover and cook on low for 75 minutes until lamb is tender.

5Uncover, simmer 10 more to thicken. Top with coriander. Serve with rice and naan.
