    Wilt the spinach in a dry pan, drain well, then blend until smooth with a splash of water.

    Cube the paneer and fry in oil until golden on all sides. Set aside.
  3. 3
    In the same oil, soften the chopped onion for 6 minutes. Add garlic, ginger, chilli and spices for 1 minute.

    Pour in the spinach purée and cream. Simmer 5 minutes to develop flavour.

    Stir in the paneer cubes, simmer another 3 minutes to warm through. Serve with rice or warm flatbreads.
