    Soak the dried chickpeas in cold water overnight (DO NOT use tinned). Drain.

    Pulse with onion, garlic, herbs, spices, salt in a food processor until rough paste forms.
  3. 3
    Add flour and baking powder. Pulse to combine. Rest the mix 30 minutes.

    Form into 16 small balls or patties.
  5. 5
    Heat oil to 170°C. Fry in batches for 4 minutes until deep golden. Drain on paper. Serve in pita with tahini.
