The recipe

Instructions

    Mix the lamb with grated onion, crushed garlic, chopped herbs, all the spices and salt.

    Knead until well combined and slightly tacky. Rest 15 minutes for flavour to meld.

    Form into 16 small kofta on skewers (soak wooden ones first), or as flat patties.
  4. 4
    Cook on a screaming-hot griddle pan or BBQ for 8-10 minutes, turning, until charred outside and cooked through.

    Pile in warm flatbread with yogurt, salad, lemon. Eat with hands.
