The recipe

    Soften chopped onion in oil for 6 minutes. Add chopped pepper for 5 more.

    Add garlic, cumin, paprika, chilli flakes for 1 minute.

    Pour in tomatoes. Simmer 8 minutes until thick and rich.
  4. 4
    Make 6 wells in the sauce. Crack an egg into each. Cover and cook 4-6 minutes until whites set.

    Crumble feta over, scatter with parsley. Serve straight from the pan with bread for dipping.
