Moroccan Carrot Salad

    Peel and slice the carrots. Boil for 5 minutes until just tender. Drain and cool.

    Whisk dressing: crushed garlic, lemon juice, cumin, paprika, olive oil, salt.

    Toss the cooled carrots with the dressing.

    Stir in chopped parsley and coriander.
  5. 5
    Cover and chill 30 minutes for flavours to meld. Serve cold or room temperature.
