1Peel and slice the carrots. Boil for 5 minutes until just tender. Drain and cool.

2Whisk dressing: crushed garlic, lemon juice, cumin, paprika, olive oil, salt.

3Toss the cooled carrots with the dressing.

4Stir in chopped parsley and coriander.

5Cover and chill 30 minutes for flavours to meld. Serve cold or room temperature.
