1Cube the beef. Brown in oil in a heavy pot. Set aside.

2In the same pot, add brown sugar — let it darken. Add chopped onion, garlic, ginger, scotch bonnet.

3Add allspice, tomato puree, then beef back. Pour in stock and add thyme.

4Simmer covered for 90 minutes until beef tender.

5Add cubed potatoes and carrots, simmer another 30 minutes until tender. Serve with rice.
