    Cube the beef. Brown in oil in a heavy pot. Set aside.

    In the same pot, add brown sugar — let it darken. Add chopped onion, garlic, ginger, scotch bonnet.

    Add allspice, tomato puree, then beef back. Pour in stock and add thyme.

    Simmer covered for 90 minutes until beef tender.
  5. 5
    Add cubed potatoes and carrots, simmer another 30 minutes until tender. Serve with rice.
