Slow-cooked Jamaican goat curry with potatoes, scotch bonnet and warm spices. Goat needs time — 2 hours minimum — but rewards with deep, savoury, gamey richness.

    Cube the goat. Toss with curry powder and salt. Leave 30 minutes.

    Brown the goat in oil in a heavy pot for 6 minutes. Remove.
  3. 3
    Soften chopped onion, garlic, ginger for 6 minutes. Add chopped scotch bonnet, thyme.

    Return goat with stock and coconut milk. Simmer covered 90 minutes.
  5. 5
    Add cubed potatoes, simmer another 30 minutes until tender. Top with spring onion. Serve with rice.
