1Cube the goat. Toss with curry powder and salt. Leave 30 minutes.

2Brown the goat in oil in a heavy pot for 6 minutes. Remove.

3Soften chopped onion, garlic, ginger for 6 minutes. Add chopped scotch bonnet, thyme.

4Return goat with stock and coconut milk. Simmer covered 90 minutes.

5Add cubed potatoes, simmer another 30 minutes until tender. Top with spring onion. Serve with rice.
