The recipe

    Cube the potatoes. Boil in salted water for 8 minutes, then add green beans and pasta. Cook until pasta is al dente.

    For the pesto: pound the basil, garlic, pine nuts and salt in a mortar until rough paste forms.
  3. 3
    Stir in the parmesan, then trickle in the olive oil while stirring to make a thick green sauce.

    Drain the pasta, beans and potato (save a ladle of water) and tip into a warmed bowl.
  5. 5
    Toss with the pesto and a splash of cooking water until everything is coated. Serve with extra parmesan.
