1Boil eggs for 6 minutes for soft-boiled. Cool in cold water, peel.

2Bring stock to a simmer with grated ginger and crushed garlic. Whisk in miso and soy.

3Sear thinly sliced beef in a hot pan for 30 seconds per side. Set aside.

4Cook noodles per packet, drain.

5Divide noodles between bowls. Pour over hot broth, top with beef, halved eggs, spinach, spring onions, nori strips and sesame oil.
