    Boil eggs for 6 minutes for soft-boiled. Cool in cold water, peel.

    Bring stock to a simmer with grated ginger and crushed garlic. Whisk in miso and soy.
  3. 3
    Sear thinly sliced beef in a hot pan for 30 seconds per side. Set aside.

    Cook noodles per packet, drain.
  5. 5
    Divide noodles between bowls. Pour over hot broth, top with beef, halved eggs, spinach, spring onions, nori strips and sesame oil.
