1Soak the dried wakame in cold water for 5 minutes. Drain.

2Cube the tofu. Bring the dashi to a gentle simmer in a saucepan.

3Add the tofu and wakame, simmer 90 seconds.

4Off the heat, dissolve the miso through a sieve into the broth. NEVER boil miso — it loses its complexity.

5Top with sliced spring onion. Serve immediately in bowls. Eat while it's fragrant.
