    Soak the dried wakame in cold water for 5 minutes. Drain.

    Cube the tofu. Bring the dashi to a gentle simmer in a saucepan.
  3. 3
    Add the tofu and wakame, simmer 90 seconds.
  4. 4
    Off the heat, dissolve the miso through a sieve into the broth. NEVER boil miso — it loses its complexity.
  5. 5
    Top with sliced spring onion. Serve immediately in bowls. Eat while it's fragrant.
