Smoky, glazed Japanese chicken skewers — bite-sized chunks of thigh and spring onion brushed with sweet soy tare and grilled until charred. Bar food, BBQ-friendly.

    For the tare: simmer soy, mirin, sake, sugar, crushed garlic and grated ginger for 8 minutes until syrupy.

    Cut the chicken into 3cm chunks and the spring onions into 3cm pieces.
  3. 3
    Thread alternately onto soaked wooden skewers — 3-4 chicken pieces and onion segments per skewer.

    Brush with oil, cook on a screaming-hot griddle for 4 minutes per side.

    In the last 2 minutes, brush with tare 2-3 times. Serve with extra tare drizzled over and sesame seeds.
