    Slice the beef as thinly as possible (freezing 30 minutes first helps). Slice the cabbage, halve the mushrooms.

    Mix the warishita: soy, mirin, sake, sugar, 200ml water. Bring to a simmer in a wide shallow pot.
  3. 3
    Add the beef in a single layer to brown briefly. Add the cabbage, mushrooms, cubed tofu and noodles.

    Simmer 6-8 minutes until everything is cooked but still has bite.

    Each diner cracks a raw egg in their bowl and beats it. Lift hot food from the pot and dip in the egg before eating.
