The recipe

Instructions

    Cube the chicken. Cube the potatoes and carrots, slice the onion.
  2. 2
    Heat oil in a heavy pot. Brown the chicken for 5 minutes. Add the onion, cook 4 more minutes.
  3. 3
    Add carrots, potatoes and stock. Bring to a simmer. Cook 20 minutes until vegetables tender.

    Off the heat, break in the curry roux blocks and stir until dissolved. Stir in honey and soy.
  5. 5
    Return to a low heat for 5 minutes to thicken. Serve over rice.
