The recipe

Instructions

    Mix flour, sugar, salt, egg and milk into a soft dough. Knead 10 minutes until silky.
  2. 2
    Divide into 4 balls. Roll each in melted butter to coat. Rest covered 90 minutes.
  3. 3
    On a heavily oiled surface, stretch each ball into the thinnest possible disc.
  4. 4
    Fold the edges in to make a square parcel. Press flat.
  5. 5
    Cook in a screaming-hot dry pan for 2 minutes per side until deep golden and flaky. Tear apart while hot, eat with curry.
