The recipe

Instructions

    Cook the rice. Mix soy, oyster sauce, sugar and fish sauce.

    Pound or finely chop the garlic and chillies — leave it rough, not paste.
  3. 3
    Heat a wok smoking hot. Add 1 tbsp oil. Toss garlic and chilli for 15 seconds.

    Add the pork. Stir-fry on high for 4 minutes, breaking up, until browned and crisp at edges. Pour over the sauce, toss.

    Off the heat, throw in the basil leaves. Serve over rice with a fried egg on top — yolk to break into the rice.
