1Soak the rice noodles in warm water for 15 minutes until soft. Drain.

2Mix the sauce: fish sauce, sugar, tamarind paste with 2 tbsp warm water.

3Heat oil in a wok, add chopped garlic for 30 seconds. Add prawns, stir-fry 90 seconds until pink.

4Push to one side, scramble eggs in the empty side. Add noodles and sauce, toss everything together hard for 2 minutes.

5Add bean sprouts and spring onions for 30 seconds. Plate with crushed peanuts, lime wedge and chopped chilli.
