Thailand's most exported dish — stir-fried rice noodles with prawns, eggs and crushed peanuts in a sweet-tart-salty sauce. Best enjoyed with extra lime and a fresh chilli on the side.

    Soak the rice noodles in warm water for 15 minutes until soft. Drain.
  2. 2
    Mix the sauce: fish sauce, sugar, tamarind paste with 2 tbsp warm water.
  3. 3
    Heat oil in a wok, add chopped garlic for 30 seconds. Add prawns, stir-fry 90 seconds until pink.

    Push to one side, scramble eggs in the empty side. Add noodles and sauce, toss everything together hard for 2 minutes.

    Add bean sprouts and spring onions for 30 seconds. Plate with crushed peanuts, lime wedge and chopped chilli.
