The recipe

    Pulse the walnuts and almonds with cinnamon to a rough chop. Melt the butter.
  2. 2
    Brush a baking tin with butter. Layer 6 sheets of filo, brushing each with butter.
  3. 3
    Spread a third of the nuts. Add 4 more layers of buttered filo. Repeat twice.

    Top with 6 final filo layers. Cut diamonds through to the bottom. Bake at 180°C for 50 minutes until deep golden.

    Boil sugar, honey, water and lemon juice for 5 minutes. Pour cold syrup over hot baklava. Rest 4 hours.
